VIDEO: Gar­den Salad

When you have zero ideas and a fridge full of veg­eta­bles, make a deli­cious sal­ad with pot bar­ley. But to make a sal­ad the main meal of the day, it must be rich, nutri­tious and mouth-water­ing!  A bunch of veg­eta­bles is rarely enough for us, so we add full-of-Omega-3-fat­ty-acids Dela­maris Gar­den Mack­er­el. At Dela­maris, we’re very proud of our range of mack­er­el prod­ucts with veg­eta­bles, which is log­i­cal, as they’re of excel­lent qual­i­ty and most of all, they taste great.  Recipe cre­at­ed by Mid­va kuha­va.

Ingredients

Solata

2 x 125 g

Delamaris Garden Mackerel

200 g

pot barley

1

large bell pepper

250 g

cherry tomatoes

2

spring onions

Salt

Dressing

2 cloves

garlic

80 g

sun-dried tomatoes

2 žlici

vinegar

3 žlice

olive oil

1 žlička

origana

150 ml

water

Instructions

Dressing: Put garlic, dried tomatoes, vinegar, oil, oregano, two pinches of salt and water into a blender to make this aromatic dressing.

Salad: Add barley and 1-2 tsp. salt to a pan of boiling water and cook for 15-20 minutes, then drain and put aside to cool. Cut bell pepper into small cubes, spring onions into mini rings and cherry tomatoes into quarters and evenly mix with the cooled barley. Now, it’s time for the star of the show, rich and healthy Delamaris Garden Mackerel, a meal on its own, which glows in this salad, combine it with the other ingredients and dressing and stir well, serve and sprinkle each portion with chopped parsley.
