Pota­to Cro­quettes with Sardines

Ingredients

500g

potatoes

1

egg

2 x 90 g

Delamaris Sardines

80g

flour

half of a lemon

salt

pepper

fresh thyme

1

egg white

bread crumbs

Instructions

Cook potatoes, peel, mash, then set aside.

Drain oil from sardines, remove bones, add lemon juice and mash with a fork, then add to mashed potatoes, season with salt and pepper, add egg and thyme, stir well and leave to rest.

Whisk the egg white well, don’t whip it, shape potato and sardine mixture into croquettes, dip them into the egg white, cover in bread crumbs, then fry in preheated oil (use Panko bread crumbs for even crunchier croquettes).
