Instructions
Combine the flour with chunks of butter and salt to get a crumble-like mixture. Add the yolk and water and knead into dough. Wrap into the transparent foil and refrigerate for one hour.
In a bowl, whisk the eggs, cream and cheese. Chop the leek and sauté it in a pan with olive oil. Leave to cool, then add into the bowl with the egg mixture and stir.
Roll the dough into a circle and put it on the tray. Prick the dough with a fork in several places. Cover with baking paper and top with dry beans to weigh the dough while it is baking. Bake at 180°C for approximately 15 minutes. Remove the baking paper with the beans and pour the egg mixture over the dough. Top with sardines and bake for another half hour until the filling thickens.
